ZUPA Z KALAFIORA I CYKORII Z KREMOWYM SERKIEM

Składniki:
1 łyżka oliwy z oliwek
1 drobno pokrojona cebula
2 marchewki
1 pietruszka
2 cykorie
1 średni kalafior
1 l bulionu warzywnego
2 łyżki kremowego serka (mascarpone, ricotta, kozi) lub śmietany
sól i pieprz do smaku

W garnku podgrzewamy oliwę. Dodajemy cebulę i pozostałe warzywa pokrojone w plastry (poza kalafiorem). Podduszamy 10 minut na małym ogniu, często mieszając. Dodajemy wywar i kalafiora. Przykrywamy garnek pokrywką i gotujemy 15 minut, aż warzywa zmiękną. Lekko studzimy, miksujemy, dodajemy ser i doprawiamy. Podajemy z grzankami lub grissini.
