GALARETKA Z KWIATÓW KONICZYNY

Składniki na 4 słoiki (po 200 ml):
300 g główek koniczyny łąkowej
500 ml białego lub różowego półsłodkiego wina
500 ml wody
350 g cukru
1/2 opakowania pektyny jabłkowej
sok z 1 cytryny

Kwiaty zalewamy wodą i winem. Podgrzewamy na małym ogniu prawie do zagotowania, ale nie doporowadzamy wrzenia. Odstawiamy pod przykryciem do ostygnięcia. Następnie wywar przecedzamy, odciskając kwiaty. Do wywaru dodajemy sok z cytryny oraz cukier i zagotowujemy. Dodajemy pektynę i gotujemy przez 3 minuty. Przelewamy do wysterylizowanych słoików. Odstawiamy do ostygnięcia pod kocem.
